Introducing WAFFLE WEDNESDAYS
As part of my on-going attempt to make this the most magical summer ever, WAFFLE WEDNESDAYS begin tomorrow evening. Yes, waffles for dinner. It's a mid-week excuse for friends to gather on balmy Summer nights--to enjoy the goodness of the season. Tomorrow evening we will be dining on sour cream banana waffles with homemade berry syrup, fresh blueberries, and whipping cream. No long-term commitment required. . .just a hunger for all things waffley and a genuine happy disposition. The potential for the Summer's Waffle Wednesdays are endless. We may dine outside, on both savory and sweet waffles. Our waffles might have special guests. . .Perky Pancakes? Freakin' Fabulously Flirty French Toast? Heavenly Hashbrowns? Oh, the possibilities are endless. Perhaps we will have waffle making contests. . .Waffle Iron Chef? Oh, that is beautiful.
I'm beginning to realize the importance of opening up one's home and person to those you love. This is my attempt to better put my ideas into action. For those too far away to visit our weekly Waffle Wednesdays. . .have you own. Invite your friends over. Entertain. Dine. LIVE together.
Banana Sour Cream Waffles (4 servings)
1 cup all-purpose flour
1 1/2 teaspoons sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg -- separated (beat egg white until stiff)
1 cup sour cream
1/4 cup milk
1/4 cup butter -- melted
1 banana -- mashed
Heat waffle iron. Stir together flour, sugar, baking powder, baking soda and salt in mixing bowl. Set aside.In separate bowl whisk together egg yolk, sour cream, milk, butter and banana. Add liquid mixture to dry ingredients, stirring just until blended. Fold in beaten egg white. Pour batter from cup or ladle onto center of hot waffle iron. Bake about 5 minutes or until steaming stops. Remove waffle carefully
