Pumpkin Chocolate Chip Waffles

One of my favorite people requested my recipe for pumpkin chocolate chip waffles. I am completely aware that the past week or two have seen a significant increase in food related posts here at WFB. That is not to suggest that I have found a secret cure for weight gain. In fact, I have not. When I do, you'll all know. For one thing, I'll look like skinny Reese Witherspoon and for another--a man by the name of Oliver will be taking my calls and typing my blog posts while I sip pineapple smoothies on the beach.

The truth is that this time of year always inspires my cooking. It's like the cool air from the west brings with it an overwhelming urge to pull out the crockpot, bake, and make pumpkin everything. What do you think about pumpkin poptarts?

So, here's my recipe (borrowed from Heidi who borrowed it from Ryan):

Ryan's famous pumpkin chocolate chip waffles:

1 1/4 c. flour
2 T. sugar
2 t. baking powder
1/2 t. each cinnamon, ginger, salt
1/8 t. nutmeg
dash of cloves

Whisk dry ingredients together and then fold in:
1 egg
6 T. canned pumpkin puree
2 T. melted butter
1 c. milk
1/4 c. mini chocolate chips

Cook in your waffle iron until tasty golden brown and douse in butter and maple syrup. I can't vouch for the nutritional quality of it, but boy they sure taste good.

These really are amazing. Take some time this week to whip up a batch. They'll change your life!
