Waffle Wednesday Revival

We had an informal Waffle Wednesday revival tonight with my friend, JaVan, as our special guest. Sometimes I forget how much I like waffles. Sometimes I just need a hot iron & a dear friend to remind me!
My next waffle adventure will definitely include this recipe:
Chocolate Waffles with Caramel-Banana Topping

  • 1 and 1/2 cups Original Bisquick baking mix
  • 1 cup sugar
  • 1/3 cup baking cocoa
  • 3/4 cup water
  • 2 Tablespoons vegetable oil
  • 2 large eggs

  • FOR TOPPING:
  • 1/2 cup packed brown sugar
  • 1/4 cup whipping (heavy) cream
  • 1/4 cup light corn syrup
  • 2 Tablespoons butter or margarine
  • 1 teaspoon vanilla
  • 3 medium bananas -- sliced
1. Make Creamy Caramel-Banana Topping (below); keep warm. Heat waffle iron; grease if necessary.

2. Stir remaining ingredients until blended. Pour batter for waffle onto center of hot waffle iron. Repeat with remaining batter.

3. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Serve with topping.

Topping:

Mix all ingredients except bananas in 1-quart saucepan. Heat to boiling over medium heat, stirring occasionally; remove from heat. Gently stir in bananas until well coated.

That sounds heavenly!!! Waffle wednesday...can I cry now??? I miss everything anymore! getting married stinks.
